I made this batch last night to top off some New York Strip steaks along side caramelized onions and they came out PHENOMENAL. The key to this recipe, in one word, is BROILER. I had not used the broiler before to cook mushrooms, as I usually opt for a skillet and a quick saute. But, I must say, the broiler did a perfect job of roasting the mushrooms and giving them that desirable caramelization we are always looking for! Will definitely be firing up the broiler again in the near future.

The prep is relatively easy, and they cook up quickly using this method. Making it the perfectly convenient addition to any meal.

The beauty of this recipe is that it is so simple, and once you have you're delicious mushrooms cooked up, they can be saved and added to any meal throughout the week! Cook up a big batch of these tasty mushrooms and add them to your morning omelets the next day, or add to a soup! The possibilities are endless!

Ingredients:

  • Full pound of fresh mushrooms (Lion’s mane, oyster, and chestnut)

  • One large shallot (diced)

  • Minced garlic

  • Extra Virgin Olive oil

  • Salt

  • Black pepper

  • Onion powder

  • Garlic powder

  • Dried oregano

  • Turmeric

  • Paprika

  • Green onion

  • Grated Parmesan (optional, omit for vegan/dairy free)

Instructions:

  1. First thing is to chop up the mushrooms. I didn’t spend much time on this because I wanted the full body of the mushroom to hold up in the roasting pan. Chestnut mushrooms can be left whole, give the oysters a quick rough chop, and then pull apart Lion's Mane pom-poms to roughly the same size as the oyster pieces.

  2. Next up is to finely dice the shallots

  3. In a mixing bowl, combine mushrooms, garlic and shallots. To the same bowl, add the seasonings. (I apologize for not having exact measurements on the seasonings I used, but it was roughly equal parts salt, pepper, onion powder, garlic powder, with a pinch of turmeric, paprika, and oregano)

  4. Mix all the ingredients thoroughly so that mushrooms are evenly coated and then spread them evenly onto a roasting pan.

  5. Set broiler on high and then roast for 3 or 4 minutes. Give them a stir, and then roast for an additional 2 or 3 minutes or until the mushrooms start to brown up and caramelize.

  6. Garnish with chopped green onion and grated Parmesan cheese.
